Vegan Pumpkin Sourdough Pancake Recipe with an Egg Substitute

Vegan is definitely not a term that comes up very often in our household. We proudly raise grass-fed beef cows, pigs, and chickens on our homestead. So, we are avid meat eaters when it comes to clean and healthy meat. But, I recently had a friend visit us from my hometown of St. Louis City. She had started a vegan lifestyle, and was really pleased with how her body and health responded to it. One of the mornings that she was here, I wanted to make pancakes for breakfast. But, my typical sourdough pancake recipe uses butter and eggs. This dilemma quickly became a fun experiment for me. I decided to further challenge myself because, like most red-blooded Americans, I like Pumpkin in the fall. And, that is how my Vegan Pumpkin Sourdough Pancake Recipe was born (using the yummiest egg substitute).

What Causes Black Broccoli Heads: How to Prevent Broccoli Soft Rot

Every time I think I have seen everything my garden can throw at me, I have to eat my words. My garden is a challenge that constantly changes. This year, our Maine weather has been odd to say the least. We had pretty intense drought conditions in the spring when it is normally wet. And, then we had heavy rainstorms throughout the month of August when it is usually dry. Because of these weather conditions, I have encountered some brand new issues in my garden. One of these new issues has been Broccoli Soft Rot. Broccoli Soft Rot (aka Head Rot) is what causes Black Broccoli Heads. So, let’s take a moment to look at what causes Broccoli Soft Rot and how to help prevent it in the future.

How to Pressure Can Turnip Roots for Storage

There are a few vegetables that always make their way into my garden because of their storage potential. Some of the vegetables that are excellent for storage include certain varieties of: Pumpkin, Squash, Rutabaga, Green Beans, Carrots, and Turnip. Now, some of these are great when stored in their original form. Turnip can be stored whole in a root cellar or other similar environment for several months (or even longer). But, for the most part, I prefer to can my Turnip. I highly recommend that you do yourself a favor, and pressure can Turnip Roots for storage. It is a great way to use up the last of those root vegetables in your garden before the ground freezes up.

Since I homeschool during the winter, I like to eliminate as much of my meal prep time as possible. Taking a jar of canned Turnip out of the cupboard, and heating it up is quick and easy. While going to the root cellar, picking out a turnip, washing it, peeling it, cutting it, and cooking it is much more time consuming. (Although, it is definitely possible that both the nutrition and flavor are better with this second option).
