Here in Maine, our winters can seem very long. And, our growing season is quite short (June to September for most crops). During the winter, I miss the constant flow of fresh vegetables and yummy green things. So, I end up doing what I can to brighten our winter food supply. Sometimes, I make Sauerkraut with Cabbages from our cold storage. Other times, I will grow sprouts in my windowsill. But, Homemade Herb Salt is one of the best ways to add a sprinkle of green to almost any meal.
Homemade Herb Salt is easy to make, does not need to be refrigerated, and you can make it with any combination of herbs available to you.

Supplies
Necessary:
- Herbs (I use Fresh Herbs for my Homemade Herb Salt)
- Sea Salt
- Glass Jar for Storage
- Glass Pan for Drying the Herb Salt
- Spoon or Spatula for Stirring
- Cutting Board and Sharp knife for Chopping the Herbs

Choosing Herbs for Homemade Herb Salt
My Herb Salt is a little different every year, depending on what herbs have done really well. Last year, I put a lot of Cilantro in my Herb Salt. But, this year, my Cilantro bolted really early and I did not end up with any extra.
Basically, just take a selection of ay healthy fresh herbs that you have. Young leaves are better when possible, but mature ones will also work.
This year, I put Sage, Parsley, Dill Flowers and Leaves, and Basil. I would normally add Rosemary and Thyme as well, but we had some torrential rain this year that effectually drowned those plants.
I prefer to choose an equal amount of each herb, in order to balance the flavors. But, if you have a favorite cooking herb, then definitely put some extra of that type.
How to Make Homemade Herb Salt with Fresh Herbs
Note: I use my Food Processor for making this Herb Salt. But, if you do not have one, then you can:
- Chop the herbs with a sharp knife
- Put them in a bowl with the salt and mix them together by hand with a large spoon or spatula.
- Strip all the leaves from the Herbs and discard the stems or other “woody” parts.
- Fill your food processor 3/4 full of herbs (leave them loose, do not pack them in). This ends up being approximately 8 loosely filled cups of fresh herbs.
- Using the “Pulse” or “P” setting, gradually chop the herbs until they look like they have been coarsely chopped with a knife.
4. Add one and a half (1 1/2) cups of non-Iodized Sea Salt.
5. Again, using the “Pulse” setting, combine the salt and herbs. Do NOT over process or the herbs will be fully minced instead of just being chopped.
6. Scrape the Herb Salt into a flat, non-metallic dish (a Pyrex 9×13 Pan works well for this).
7. Spread the Herb Salt out so that it is a flat and even layer for optimal drying.
8. Allow it to dry for 24 hours, and then stir and spread it out again.
9. Continue to do this until the whole batch of Herb Salt feels dry to the touch. The last batch I made took 3 days to dry. But, it will vary based on the humidity level in your house, the types of herbs you used, and how thin you spread the salt while drying.
10. Once the Homemade Herb Salt is dry, then put it into a jar for storage. I put mine in a large vintage canning jar and keep in on a shelf near my stove for easy access when I am cooking. Plus, it just looks pretty. Just keep in mind that it should not be directly next to or above the stove. The continual heat will ruin the flavor.
How to Make Homemade Herb Salt without a Food Processor
- Take approximately 8 loosely filled cups of herb leaves and coarsely chop them with a knife.
- Put them in a non-metallic mixing bowl.
- Add 1 1/2 cups of non-iodized Sea Salt
- Mix with a Spoon until the herbs and salt are fully incorporated.
- Continue with the same process explained above for drying and storing your Herb Salt.
How to Use Your Homemade Herb Salt
I have a couple of recipes linked below that specifically suggest using this Herb Salt. But, I use it in most of my cooking throughout the fall and winter months.
Note: If you are following a recipe, increase the salt by about 50% since the Herb Salt is not purely Salt.
